Pistachio Contest winners.

We got tons of entries for the Pistachio contest. in fact it was tough to choose winners. However, without further ado, here are the winning entries.

FIRST - - Vanita Lalwani SHe says "I came up with this recipe recently after I got to know the benefits of pistachio's. I had a bagful of them and were not being consumed by anyone at home. being a foodie I hate anything go waste, so when I had some guests at home I prepared this starter and it was a huge hit! I have also subdstituted the chicken to paneer [cottage cheese] and it was a huge hit with guests as well. Chinese style stir fried pistachio chicken 1/2 cup Wonderful salted pistachios 250 gms boneless chicken 5 cloves of garlic finely chopped 1 tbsp soya sauce 1 tsp oyster sauce a dash of vinegar 1 pich sugar to balance out the flavor 2 green chillies sliced 1 tbsp tomato ketchup 1 tbsp olive oil 2 spring onion greens Method In a wok heat the olive oil and add the garlic chilli chicken and stir fry on high flame. When the chicken is 70% ready add the sauces and toss. Once the dish is almost ready add in the pistachios and toss till all the pistachios are covered with the sauce, check the flavor and can add some more sauces if needed. Cut in the spring onions and serve hot or cold tastes really good either ways. Works well with noodles as well .

SECOND - Shalini Ravimohan
She says "I have a passion for cooking and keep experimenting with salads and soups. In one of my creative moments a couple of years ago, I put together "SUNSHINE SALAD WITH PISTACHIOS" and my family loved it! It is very nutritious because it is a combination of fruits and vegetables. I am now happy to share this with you.

Ingresients:
1/2 cabbage cut thin and long
1 Carrot grated
1 Cucumber cut into 1 inch pieces
1 Capsicum cut into thin strips
2 Pineapple slices cut into pieces
Segments of one Sweet lime
Segments of one Orange
1/2 cup Wonderful Pistachios
Salt and pepper to taste
2 teaspoons lemon juice
Bread Croutons
Method:
Mix gently all ingredients and top with Pistachios and croutons while serving so they remain crisp

THIRD - Pinky Darius Mistry
Pista Rum-n-Raisin Chocolate
Ingredients:
1, 200g bar Milk Chocolate,
100 g raisins soaked in half cup rum,
1 c pistachios
Optional: orange essence
Method: Melt the chocolate through the double-boil method. Add the raisins, pistas and essence. Freeze for a few minutes for them to firm. Roll into balls. {Tip: If consistency is a problem, then add a spoon or two of drinking chocolate, this will help to solidify}
